Air Fryer Salmon Bites
I didn't believe salmon could get genuinely crispy in an air fryer until I tried these. The outside gets this salty, paprika-crusted edge while the inside stays silky and medium-rare. Preheat the air fryer to 200°C (400°F). If your model doesn't have a preheat setting, run it empty for 3 minutes.

Pat the salmon cubes dry with a paper towel — this is the step that makes the difference between crispy and steamed. Toss them in a bowl with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
Tip: Don't crowd the bowl. If the cubes are too wet, the seasoning slides off instead of sticking. - 3
Arrange the salmon in a single layer in the air fryer basket. Leave a little space between each piece so air can circulate.

Cook for 8-10 minutes. At the 6-minute mark, give the basket a shake. The salmon is done when the edges are golden and the centers flake easily with a fork.

Squeeze fresh lemon over the hot salmon bites and serve immediately.
Pairings
These salmon bites are great over white rice with steamed broccoli and a drizzle of soy sauce. For something lighter, pile them onto a big salad with cucumber and avocado. They also work cold the next day tossed into a grain bowl.
A Few Variations
- Honey garlic: Skip the paprika and toss the salmon with 1 tbsp honey, 2 minced garlic cloves, and a splash of soy sauce before air frying.
- Spicy: Add 1/2 tsp chili flakes or a pinch of cayenne to the seasoning mix.
- Frozen salmon: Thaw completely in the fridge overnight and pat very dry before seasoning. Extra moisture from frozen fillets will steam instead of crisp.
Storage
Store cooked salmon bites in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 180°C for 3-4 minutes — the microwave works in a pinch but won’t bring back the crisp edges.
