Protein Mug Cake
I discovered mug cakes during a stretch of late-night deadline work when the only thing between me and ordering a dozen cookies was the fact that I'd already put on pajamas. This one takes 90 seconds in the microwave and scratches the chocolate-cake itch without the sugar crash. The center stays molten if you time it right — spoon it straight from the mug.

Instructions
- 1
In a microwave-safe mug (at least 12 oz capacity — it rises), whisk the egg, milk, and protein powder together with a fork until no dry lumps remain.
- 2
Add the cocoa powder and baking powder. Mix again until smooth and glossy.
Tip: Scrape the bottom corners of the mug. Dry pockets of protein powder taste terrible. - 3
Microwave on high for 60-90 seconds. Start checking at 60 seconds — the top should look set but still slightly glossy in the center. It will continue cooking from residual heat.
- 4
Let it rest for 30 seconds before eating. The center will be molten and the edges cakey.
Toppings Worth Adding
- A spoonful of Greek yogurt on top (sounds weird, tastes like frosting)
- A few dark chocolate chips pressed into the batter before microwaving
- A drizzle of peanut butter
- A pinch of flaky salt
Protein Powder Matters
Different protein powders behave differently in the microwave. Whey gives a lighter, more cake-like texture. Plant-based proteins tend to come out denser — add an extra teaspoon of milk if the batter looks thick. Casein makes it almost brownie-like, which is not a bad thing.
Important: No Overcooking
The line between molten-center perfection and dry hockey puck is about 15 seconds. Every microwave is different. Go short and add time in 10-second increments until you learn what your microwave does.
